About Vegetable oil, palm kernel
The oil palm (Elaeis) is the tropical palm behind palm oil, the most widely produced vegetable oil in the world. Two species are grown, the African and the American oil palm, and their reddish fruit clusters yield two distinct products: palm oil pressed from the fleshy pulp and palm kernel oil from the seed inside. Palm oil is semisolid at room temperature, which makes it a workhorse in baked goods, margarine, snack foods, and countless packaged items, while unrefined red palm oil carries a deep orange color and ranks among the richest natural sources of beta-carotene and vitamin E tocotrienols.
It's calorie-dense and high in saturated fat, so it's best used in moderation. Because large-scale cultivation has been tied to deforestation, many shoppers look for oil certified as sustainably grown. Stored in a cool, dark cupboard, palm oil keeps for many months without turning rancid.
