About Tamarinds, raw

Tamarind is the sticky brown pulp inside the long, brittle pods of the tamarind tree, and it delivers one of the most useful flavors in the global pantry: a deep, fruity sourness with a sweet, almost date-like undertone. It is the tang behind Worcestershire sauce, many Indian chutneys, Thai pad thai and countless cooling drinks.

The pulp is concentrated and naturally sugary, so it is calorie-dense for a fruit at about 239 calories per 100 grams, carrying carbohydrate, fiber and a notable amount of minerals — magnesium, potassium and iron in particular. Because it is used as a seasoning by the spoonful rather than eaten in bulk, those calories rarely add up to much in a finished dish.

It is sold as whole pods, pressed blocks of pulp, or ready-made concentrate and paste. A small amount dissolved in warm water provides the sour note that brightens curries, marinades, candies and agua fresca.
