About Tamarind nectar, canned
Tamarind (Tamarindus indica) is the sticky, sweet-and-sour pulp found inside the brown, brittle pods of a tall tropical tree native to Africa and now grown across South Asia, Southeast Asia, and Latin America. Its name comes from Arabic words meaning Indian date, a nod to the ripe pulp's tangy, fruity, almost date-like tartness, which owes its sourness to natural tartaric acid and lends a signature note to cooking around the globe.
Tamarind is the backbone of pad thai, the souring agent in Indian chutneys, curries, and sambar, a key ingredient in Worcestershire and many barbecue sauces, and the base of refreshing aguas frescas as well as tangy Thai and Mexican candies. It supplies fiber, magnesium, potassium, and antioxidants. Tamarind is sold as whole pods, pressed seedless blocks of pulp, and ready-made concentrate or paste, and the blocks are soaked in hot water and strained to draw out the tart liquid, while sweeter dessert varieties are eaten straight from the pod.
Store tamarind pulp or paste in an airtight container in the refrigerator, where its natural acidity helps it keep for a very long time.
