About Spices, poppy seed
Poppy seeds are the tiny, kidney-shaped seeds of the opium poppy (Papaver somniferum), harvested from the dried seed pod and used as a food and spice for thousands of years; the mature seeds are a culinary staple and do not produce the effects associated with other parts of the plant. Slate-blue to grayish in the common variety and creamy white in others, they have a pleasant crunch and a mild, sweet, nutty flavor that deepens when toasted.
Poppy seeds are rich in healthy fats, plant protein, fiber, calcium, magnesium, and manganese. They are sprinkled over breads, bagels, rolls, and crackers, stirred into dressings and noodle dishes, and most famously ground into a sweet, rich filling for the pastries, strudels, and cakes of Central and Eastern Europe. In South Asian cooking, white poppy seeds are ground to thicken and enrich curries.
Store poppy seeds in an airtight container in the refrigerator or freezer, since their oils can turn rancid.
