About Parsley, freeze-dried

Parsley is a bright, fresh-tasting herb with a clean, slightly peppery flavor, used the world over as both a garnish and a key ingredient. It comes in two main types: curly parsley, with ruffled leaves often used for decoration, and flat-leaf or Italian parsley, which has a more robust flavor and flat leaves preferred for cooking. Far more than a plate decoration, parsley is rich in vitamin K, vitamin C, vitamin A, and folate for almost no calories, and chewing it has long been used to freshen the breath.

It is the green heart of dishes like Middle Eastern tabbouleh, Argentine chimichurri, and Italian gremolata, and it brightens soups, sauces, salads, grain bowls, and roasted vegetables, pairing especially well with lemon and garlic. The tender stems carry plenty of flavor too and are worth saving for stocks and sauces. Stir it in near the end of cooking or use it raw to keep its fresh color and taste.

Store the bunch like a bouquet in a glass of water in the refrigerator, loosely covered, to keep it perky for well over a week.
