About Nuts, chestnuts, european, roasted
The sweet chestnut (Castanea sativa), also called the European or Spanish chestnut, is the glossy brown nut of a stately deciduous tree native to southern Europe and Asia Minor, encased in a fiercely spiny green burr. Unlike most nuts, the chestnut is low in fat and high in starch, making it more like a grain, with a soft, floury texture and a sweet, earthy, faintly nutty flavor once cooked. Chestnuts provide complex carbohydrates, fiber, vitamin C, potassium, and B vitamins, and they are naturally gluten-free.
They are most beloved roasted over a fire until the shells split and the flesh turns sweet and tender, and they are also boiled, pureed into soups and desserts, candied into French marrons glaces, ground into flour for breads and cakes, and used to stuff holiday poultry. Score the shells before roasting so they peel easily. Choose firm, heavy, glossy nuts with no holes, and store fresh chestnuts in the refrigerator.
