Coho salmon (Oncorhynchus kisutch), also called silver salmon, is a Pacific salmon prized for its bright orange-red flesh and clean, delicate flavor. Milder and a bit leaner than king salmon, it has a tender, flaky texture that makes it an approachable, all-purpose salmon.
