Herring is enjoyed fresh and simply grilled or fried, but it is best known preserved by smoking, pickling, and curing, turning up as kippers and pickled herring across many cuisines. Its prized roe, known as kazunoko, is a delicacy in Japanese cooking, and herring roe on kelp is a traditional treat as well. Young herring are also canned in the sardine style.
