About Fireweed, leaves, raw

Fireweed is a tall, striking wild plant of the northern temperate and boreal world, named for the way it blankets burned clearings and disturbed ground with spikes of magenta-pink flowers. Nearly every part has a use in the northern kitchen: the young spring shoots are cooked like asparagus, the tender leaves and flowers are steeped into an earthy herbal tea that is fermented into a traditional beverage in Russia, and the blossoms flavor jellies and syrups.

Fireweed honey, made by bees working vast stands of the flowers, is a pale, mild, prized specialty from Alaska and Canada. The greens supply vitamin C, vitamin A, and fiber, and traditional northern peoples have long relied on the plant as both food and medicine. It flourishes across the Northern Hemisphere and is often the first plant to green up after a wildfire, which is how it got its name. Harvest the shoots while young and the leaves before the plant flowers, when they are at their most tender.
