About Cowpeas, catjang, mature seeds, cooked, boiled, without salt
The catjang pea (Vigna unguiculata subsp. cylindrica), also called the catjang bean or sow pea, is a subspecies of the cowpea, closely related to the familiar black-eyed pea. Grown across Africa, Asia, and other warm regions, this hardy, drought-tolerant legume produces small, cylindrical seeds in short, upright pods, along with edible young pods and leaves. Catjang peas are a valuable source of plant protein and fiber, along with iron, folate, and other minerals.
The dried seeds are cooked much like other cowpeas, simmered into stews, curries, and dals or boiled as a side dish, while the tender young pods can be eaten like green beans and the leaves cooked as a nutritious green. The plant is also widely grown as a forage and cover crop. Store dried catjang peas in an airtight container in a cool, dry pantry, where they keep for a long time.
