About Couscous, dry

Couscous is a North African staple of tiny golden granules rolled from semolina, the coarse flour of durum wheat. Though it looks and cooks like a grain, it is technically a pasta, and its quick preparation has made it a weeknight favorite far beyond the Maghreb. Traditional hand-rolled couscous is steamed over a bubbling stew, while the instant version sold in most stores is ready in about five minutes: just pour hot liquid over it, cover, and fluff with a fork.

Its mild, nutty flavor soaks up whatever it is paired with, from lamb tagine to roasted vegetables to a bright lemon-herb salad. A cooked cup provides around 175 calories along with plant protein and some fiber, more still in whole-wheat versions. Larger pearl couscous, also called Israeli couscous, has a chewier, more pasta-like bite. Store the dry granules in an airtight container in the pantry, where they keep for many months.
