The adzuki bean (Vigna angularis) is a small, reddish-brown legume widely grown across East Asia and beloved for its naturally sweet, nutty flavor. Unlike most beans, it is used as much in sweets as in savory cooking, most famously simmered with sugar into anko, the smooth or chunky red bean paste that fills mochi, dorayaki pancakes, taiyaki, steamed buns, and mooncakes. Adzuki beans are a nutritious plant-based food, rich in protein, fiber, folate, iron, and magnesium.
Beyond sweets, they are cooked with glutinous rice in the celebratory Japanese dish sekihan, whose red color symbolizes good fortune, and they turn up in soups, stews, and sprouted in salads. Rinse dried adzuki beans and pick them over before cooking, and store them in an airtight container in a cool, dry, dark place, where they keep for a long time, though older beans take longer to soften.
