About Oil, nutmeg butter
Nutmeg is a warm, sweet, aromatic spice ground from the seed of the fruit of an evergreen tree native to the Banda Islands of Indonesia, the original Spice Islands. The very same fruit yields a second spice, mace, the lacy scarlet covering that wraps around the seed and tastes similar but more delicate. Nutmeg's rich, nutty, faintly woody warmth works in both sweet and savory cooking, showing up in eggnog, pumpkin pie, spice cakes, and baked custards on one hand and creamy bechamel, mashed potatoes, buttered spinach, and sausage on the other.
It is used in small amounts, both because the flavor is potent and because very large doses are unsafe, and it carries antioxidant plant compounds.
