Canola oil is a mild, light-colored oil pressed from the seeds of a type of rapeseed bred to be low in the bitter compounds the original plant carried. Its neutral flavor and high smoke point have made it one of the most widely used all-purpose cooking oils, equally at home in frying, baking and salad dressings.
