About Oil, canola
Canola oil is a mild, light-colored oil pressed from the seeds of a type of rapeseed bred to be low in the bitter compounds the original plant carried. Its neutral flavor and high smoke point have made it one of the most widely used all-purpose cooking oils, equally at home in frying, baking and salad dressings.
Nutritionally it stands out for being low in saturated fat — among the lowest of the common cooking oils — while supplying a useful amount of the plant omega-3 fat ALA and a good share of monounsaturated fat. Like all pure oils it is calorie-dense, at about 884 calories per 100 grams, since it is essentially 100 percent fat with no carbohydrate or protein.
Its clean taste is exactly why it is so popular: it lets other ingredients come through rather than adding flavor of its own. That makes canola a sensible everyday default for high-heat cooking and baking alike.
