About Nuts, chestnuts, japanese, dried

The Japanese chestnut (Castanea crenata) is a chestnut species native to Japan and Korea, grown for its large, sweet, starchy nuts. Among the biggest of the cultivated chestnuts, its glossy, mahogany-shelled nuts are milder and sometimes less sweet than European chestnuts but prized for their impressive size and tender, floury flesh. Unlike most nuts, chestnuts are low in fat and high in complex carbohydrates, more like a starchy vegetable or grain, and they supply fiber, vitamin C, B vitamins, and potassium along with some protein.

They are roasted, boiled, steamed, and pureed, and in Japanese cooking they star in autumn dishes such as chestnut rice and the sweet candied confection kuri kanroni, as well as pastes for desserts, and their naturally gluten-free flour is used in baking.
