About Moose, liver, braised (Alaska Native)

Moose (Alces alces), known as the Eurasian elk in Europe, is the largest member of the deer family, and its dark red meat is a lean, flavorful game meat long valued by hunters and Northern communities across Scandinavia, Canada, and Alaska. Because moose are wild browsers that are hunted rather than farmed, the meat is not sold in most supermarkets and reaches the table mainly through hunting and subsistence traditions.

Moose tastes much like beef but leaner and a touch richer, with a mild, clean, slightly sweet flavor rather than a strong gamey one.
