The northern pike (Esox lucius), known simply as pike, is a long, slender freshwater predator found across the lakes and rivers of North America, Europe, and Asia. A popular sport fish, it has lean, firm, flaky white flesh with a mild flavor, though it is famously bony, with a row of fine Y-shaped bones that take some care to remove. Pike is very lean and a good source of quality protein, vitamin B12, niacin, and phosphorus, with little fat.
It is baked, broiled, pan-fried, or poached, and in Northern and Eastern European cooking the meat is traditionally ground into the delicate dumplings known as quenelles and into gefilte fish. The flavor pairs well with butter, lemon, and herbs. Because freshwater fish is delicate, choose firm fillets with a clean smell, and keep pike well chilled, cooking it within a day or two or freezing it.
