About Fish, pike, northern, raw

The northern pike (Esox lucius), known simply as pike, is a long, slender freshwater predator found across the lakes and rivers of North America, Europe, and Asia. A popular sport fish, it has lean, firm, flaky white flesh with a mild flavor, though it is famously bony, with a row of fine Y-shaped bones that take some care to remove. Pike is very lean and a good source of quality protein, vitamin B12, niacin, and phosphorus, with little fat.

It is baked, broiled, pan-fried, or poached, and in Northern and Eastern European cooking the meat is traditionally ground into the delicate dumplings known as quenelles and into gefilte fish.
