About Cabbage, mustard, salted

Mustard greens (Brassica juncea), also called Chinese mustard or Indian mustard, are the peppery, frilly leaves of the mustard plant, carrying a bold, sharp, almost horseradish-like bite when raw. Cooking tames that heat into a deep, savory, cabbage-like flavor. A cornerstone of soul food in the American South, they are slow-simmered with smoked pork into a pot of greens, and they are equally at home stir-fried in Chinese kitchens, pickled across Asia, or added raw in small amounts to brighten a salad.

Mustard greens are extremely nutrient-dense and very low in calories, exceptionally high in vitamin K, vitamin A, and vitamin C. The plant's seeds are pressed for oil and ground into the condiment mustard. Choose crisp, vibrant leaves, and store mustard greens wrapped in the refrigerator, washing them well to remove any grit before cooking.
