About Spices, caraway seed
Caraway is a warm, aromatic spice made from the dried seeds of a plant in the carrot and parsley family, sometimes called Persian cumin because the seeds look so similar to cumin. The slender, crescent-shaped seeds carry an earthy, slightly sweet, anise-like flavor that is the signature taste of rye bread, and they show up in sauerkraut, sausages, cheeses such as Havarti, and the cabbage, potato, and pork dishes of Central and Eastern Europe.
Caraway also flavors the Scandinavian and German liqueurs aquavit and kummel. The seeds offer fiber, iron, and antioxidant plant compounds, and they carry a long traditional use for easing digestion and bloating. Toasting them briefly in a dry pan before use awakens their fragrance and deepens their flavor, and because they hold up well, they can go into dishes at the start of a long cook. The young leaves and the taproot of the plant are edible too.
