About Nuts, butternuts, dried

The butternut (Juglans cinerea), commonly called the white walnut, is a North American nut tree closely related to the black walnut, bearing oblong nuts inside a sticky green husk and a deeply ridged, hard shell. The oily kernel has a sweet, rich, mild, buttery flavor, gentler and less bitter than a black walnut, which is how the tree earned its name. Butternuts are high in healthy fats, plant protein, and fiber, along with minerals.

Once cracked from their tough shells, the nuts are eaten out of hand, baked into cookies, cakes, breads, and candies, sprinkled over salads, or made into the maple-butternut candy of New England, and Indigenous peoples traditionally boiled them for their rich oil. Because their high oil content can turn rancid, the nuts are best stored cold. Store shelled butternuts in an airtight container in the refrigerator or freezer to keep them fresh.
