About Milk, canned, condensed, sweetened
Condensed milk, most often sold as sweetened condensed milk, is cow's milk with about 60 percent of its water removed and a generous amount of sugar added, cooked down into a thick, sticky, ultra-sweet liquid. Developed in the 1800s as a way to preserve milk before refrigeration, its high sugar content and canning give it a long shelf life. It is a dessert workhorse: just a few ingredients away from fudge, caramel, key lime pie, tres leches cake, and no-churn ice cream, and it is the star of Vietnamese iced coffee and Thai iced tea.
Simmered slowly in the can, it transforms into rich golden dulce de leche. Because of the added sugar it is calorie-dense, with a tablespoon carrying about 60 calories, so recipes use it as a sweetener rather than a drink. Do not confuse it with unsweetened evaporated milk. Store unopened cans in the pantry, and once opened move the milk to a covered container in the refrigerator.
