Water buffalo (Bubalus bubalis) is a large domesticated bovine raised across Asia, Europe, and beyond for its meat, its rich milk, and its work in the fields. The lean red meat, sometimes called carabeef, looks and tastes much like beef but is naturally lower in fat and cholesterol while being high in protein, iron, and zinc. It is used in much the same way as beef, in curries, stews, burgers, sausages, and grilled dishes, and because it is lean it cooks best with gentle heat and a little extra moisture to stay tender.
Just as important, water buffalo milk is prized for its richness and is the traditional source of true Italian mozzarella di bufala as well as many South Asian dairy foods. The animal is a cornerstone of rural life across much of the world. Cook buffalo meat gently to keep it juicy, and avoid overcooking the lean cuts.
