About Chokecherries, raw, pitted (Shoshone Bannock)

The chokecherry (Prunus virginiana) is a small wild cherry native to North America, borne in long, drooping clusters on hardy shrubs and trees across much of the continent. Ranging from bright red to deep purple-black as it ripens, the fruit is famously astringent and mouth-puckering when raw, sour and bitter enough to earn its name, though fully ripe dark berries turn sweeter and more palatable. Chokecherries are rich in antioxidant anthocyanins along with vitamin C, and they have long been a staple of Indigenous cooking, pounded with meat and fat into pemmican.

Because of their tartness they truly shine cooked and sweetened into ruby jelly, syrup, jam, sauce, and country wine, where their bold wild-cherry flavor comes into its own. Note that the leaves and pits contain compounds that release cyanide, so only the cooked flesh is used and the pits are strained out and discarded. Gather fully ripe, dark berries, cook chokecherries into preserves, or freeze them for later, keeping fresh fruit only briefly in the refrigerator.
