About Vanilla extract

Vanilla extract is the warm, sweet, floral flavoring made by steeping cured vanilla beans in alcohol — the indispensable backbone of baking, behind the rounded sweetness of cakes, custards, ice cream and countless desserts. Real vanilla is one of the most labor-intensive and costly flavorings there is.

Used by the teaspoon it contributes very little in the way of calories or nutrients; the figures per 100 grams look noticeable mainly because of its alcohol and sugar content, but you never use anywhere near that much. Its whole purpose is aroma and flavor.

A splash of real vanilla extract adds a depth and warmth that imitation 'vanilla flavor' (synthetic vanillin) only approximates — a small luxury that lifts almost any sweet bake.
