About Spices, anise seed

Anise (Pimpinella anisum), often called aniseed, is a small flowering plant in the parsley and carrot family grown for its tiny, sweet seeds and their unmistakable licorice flavor. Native to the eastern Mediterranean and the Middle East, it has perfumed kitchens and apothecaries since antiquity. The seeds flavor cookies, breads, and confections, from Italian pizzelle and biscotti to German springerle and pfeffernusse, and they give their signature taste to the family of anise spirits such as ouzo, sambuca, pastis, arak, and absinthe.

Anise carries a long tradition as a digestive aid and breath freshener, and it contributes antioxidant plant compounds. Its licorice note comes from anethole, the same aromatic compound found in fennel and star anise, so the three taste alike even though anise comes from an entirely different plant than the star anise tree. Lightly crushing or gently toasting the seeds releases far more of their fragrant oils just before use.

Keep aniseed whole in an airtight container away from heat and light, and grind it only as needed to preserve that warm, sweet aroma.
