Cupuaçu (also spelled cupuassu or copoasu) is a tropical fruit from a rainforest tree that is a close cousin of cacao, native to the Amazon basin and cultivated across Brazil, Colombia, Peru, and Bolivia. Inside its thick brown rind is a creamy white pulp with a striking aroma often described as a cross between chocolate and pineapple, and a flavor that leans toward pear with a hint of banana. That pulp is turned into juices, ice creams, mousses, candies, and jams throughout South America, while the fat-rich seeds are pressed into cupuaçu butter, a prized ingredient in both fine chocolate and skin care.
