About Mothbeans, mature seeds, raw
The moth bean (Vigna aconitifolia), also called the mat bean, matki, dew bean, or Turkish gram, is a small, remarkably drought-hardy legume grown mainly in the hot, arid regions of India and Pakistan, especially Rajasthan. The tiny, oblong, yellowish-brown seeds have an earthy, mildly nutty flavor, and the sprawling vine is one of the most heat- and drought-tolerant pulses in the world, thriving where few other crops survive.
Moth beans are an excellent source of plant protein, fiber, iron, and folate, with very little fat. They are especially popular sprouted, when the tender sprouts, known as matki, are simmered into the spicy Maharashtrian curry usal, folded into misal pav, or tossed into salads and stir-fries. The whole dried beans are also cooked into dals and stews, and they are milled into flour for crisp fried snacks.
Quick-cooking compared with many pulses, they need little soaking when sprouted. Keep dried moth beans in an airtight container in a cool, dry place, and rinse fresh sprouts well, using them within a day or two of their peak.
