About Fish, pollock, walleye, raw
Alaska pollock or walleye pollock (Gadus chalcogrammus) is an abundant, sustainably managed cold-water fish from the North Pacific and one of the most heavily harvested food fish in the world. It has lean, white flesh with a mild, delicate flavor and a soft, fine flake, making it a gentle, affordable everyday fish. Pollock is high in lean protein and low in fat, supplying vitamin B12, selenium, phosphorus, and omega-3 fatty acids.
Though sold fresh and frozen as fillets, it is best known as the fish behind countless breaded fish sticks, fish fillet sandwiches, and fish and chips, and it is the primary fish used to make surimi, the processed paste shaped into imitation crab and seafood. Its gentle flavor takes well to breading, frying, baking, and chowders. Choose firm, translucent fillets with a clean smell, and store Alaska pollock well chilled and use it within a day or two, or keep it frozen.
