About Burdock root, raw
Burdock (Arctium lappa), known as gobo in Japan, is a long, slender root vegetable prized across East Asian cooking for its earthy, sweet, slightly nutty flavor and satisfying crunch. The dark, fibrous taproot can grow several feet long and is dug before the plant's bristly seed burrs form, the very burrs that famously inspired a Swiss engineer to invent Velcro after finding them clinging to his dog.
Burdock is most popular in Japanese and Korean kitchens, shredded and stir-fried with carrot in the sweet-savory classic kinpira gobo, simmered in soups and hot pots, or pickled, and the dried root is also roasted into a caffeine-free tea and brewed into the old-fashioned dandelion-and-burdock drink. It is low in calories and a good source of fiber, including the prebiotic inulin that feeds healthy gut bacteria, plus antioxidants, and it carries a long history in herbal medicine and macrobiotic cooking.
The cut flesh browns quickly, so scrub the root well, peel it, and drop the pieces straight into cold water. Wrapped in a damp towel, fresh burdock keeps in the refrigerator for a week or so.
