Arrowroot is a fine white starch extracted from the roots of several tropical plants, most traditionally the arrowroot tuber. Sold as 'arrowroot flour' or 'arrowroot powder', it is a thickening agent much like cornstarch, valued for the clear, glossy finish it gives sauces and for being flavorless, grain-free and gluten-free.
