About Arrowroot, raw
Arrowroot is a fine, white starch extracted from the roots of tropical plants, most often Maranta arundinacea, and used as a natural thickener in the kitchen. Flavorless and gluten-free, it thickens sauces, gravies, pie fillings, puddings, and fruit glazes into a glossy, clear finish, unlike the cloudy look that flour or cornstarch can leave. Cooks like it because it sets at a lower temperature and keeps thickening sauces that contain acidic ingredients, where cornstarch can fail.
It is usually stirred into a little cold liquid first to make a slurry, then added near the end of cooking, since long boiling can thin it back out. Arrowroot is also valued as an easily digested starch and shows up in grain-free and paleo baking. Store arrowroot powder in an airtight container in a cool, dry place, where it keeps for a long time.
