About Vital wheat gluten

Vital wheat gluten is the protein of wheat, isolated and dried into a fine powder. It is made by washing the starch out of wheat dough until only the stretchy gluten remains, which is then dried and ground. Bakers add a spoonful to give breads more rise and chew, and it is the foundation of seitan, the chewy meat substitute popular in vegetarian and vegan cooking.

At about 370 calories per 100 grams, it is extraordinarily high in protein — among the most protein-dense plant ingredients sold — with little carbohydrate or fat. As pure wheat gluten, however, it is precisely the substance that people with celiac disease and gluten sensitivity must avoid entirely; it is one of the most concentrated dietary sources of gluten that exists.

Added in small amounts to bread dough, it strengthens the crumb and helps wholegrain and low-gluten flours rise.
