Cinnamon is the warm, sweet, woody spice ground from the inner bark of cinnamon trees — a baking essential and a fixture of everything from porridge and pastries to curries and mulled wine. There are two main types: the common, robust cassia and the more delicate, expensive 'true' Ceylon cinnamon.
Used by the pinch, it isn't a meaningful source of calories or everyday nutrients, but it's one of the most antioxidant-rich spices there is, and it's been studied for modest effects on blood sugar. One note: cassia cinnamon is high in a compound called coumarin, best not consumed in very large daily amounts.
A little cinnamon adds a lot of warmth and natural sweetness, which is part of why it's so handy for cutting back on sugar — a sprinkle makes food taste sweeter than it is.
