About Roselle, raw

Roselle (Hibiscus sabdariffa) is a tropical shrub grown across Africa, the Caribbean, and Southeast Asia for its fleshy, ruby-red flower calyces, the cupped sepals that surround the seed pod after the bloom fades. Tart and cranberry-like, with a vivid crimson color, these calyces are the source of the popular hibiscus tea sold around the world. Roselle is low in calories and rich in vitamin C and anthocyanin antioxidants, and hibiscus infusions have been studied for supporting healthy blood pressure.

Dried or fresh, the calyces are steeped into the bright, refreshing iced and hot teas known as agua de jamaica, karkade, and bissap, and they are also cooked into jams, jellies, syrups, sauces, and chutneys, while the young leaves are used as a tangy cooking green.
