About Nuts, hickorynuts, dried
The hickory nut is the rich, edible nut of the hickory tree (genus Carya), a group of tall North American hardwoods that also includes the pecan, the most famous hickory of all. Encased in a hard, four-part husk and a tough shell, the kernel has a sweet, buttery, distinctly nutty flavor much like a richer, fuller pecan. Shagbark and shellbark hickories yield the best eating nuts, while some species are too bitter to enjoy.
Hickory nuts are high in healthy fats, protein, and fiber, along with manganese and other minerals. They are eaten out of hand, baked into pies, cookies, breads, and candies, sprinkled over salads and desserts, and were a traditional food of Indigenous peoples, who pounded them into a rich nut milk. The same trees give the prized hickory wood used to smoke foods. Cracking the hard shells takes effort, so store shelled hickory nuts in an airtight container in the refrigerator or freezer to keep them fresh.
