About Jujube, dried

The jujube (Ziziphus jujuba), also called the red date or Chinese date, is a small round fruit borne on a thorny tree that has been cultivated in China for thousands of years. Picked fresh, it is crisp and apple-like with green-to-red skin; left to ripen and dry, it wrinkles into a deep-red, chewy fruit that tastes remarkably like a date. Jujubes run low in fat and supply a good dose of vitamin C, fiber, and antioxidants.

The fresh fruit is eaten out of hand like a little apple, while dried jujubes are simmered into teas, soups, congee, and stews throughout East Asian cooking, candied as a snack, or used as a natural sweetener.
