About Fish, sucker, white, raw
The white sucker is a common freshwater fish of North American lakes and rivers, named for its thick, downturned, suckerlike mouth that vacuums food from the bottom. Though often overlooked by anglers, it is a perfectly good eating fish with sweet, white, flaky flesh, and it has long been a food source for Indigenous peoples and rural communities across its range. The main drawback is its many small Y-shaped bones, which is why it is often scored, pickled, canned, ground into fish cakes and patties, or smoked, all methods that soften or work around the bones.
In early spring, suckers run upstream to spawn in great numbers and are traditionally netted or speared, a seasonal harvest sometimes called a sucker run. Like other lean freshwater fish, white sucker offers high-quality protein, B vitamins, and minerals with little fat. Its firm flesh takes especially well to smoking. Use white sucker very fresh, keep the catch cold on ice, and try pickling or grinding it to make the most of an underrated and abundant fish.
