Greenland halibut, also sold as Greenland turbot or black halibut, is a deep-water flatfish from cold northern seas. Unlike the leaner Atlantic and Pacific halibut, it has noticeably richer, more buttery flesh thanks to its higher fat content, which keeps it moist and gives it a melting texture.
