The freshwater drum (Aplodinotus grunniens), also called the sheepshead, gaspergou, or simply drum, is a North American fish of large rivers and lakes, named for the deep drumming sound the males make. It is the only freshwater member of the drum family, and it has firm, mildly flavored white flesh that flakes nicely when cooked. Freshwater drum is a good source of lean, high-quality protein along with vitamin B12, selenium, and omega-3 fatty acids.
Once dismissed as a rough fish, it has gained appreciation as fine, affordable eating when handled fresh, and it is especially good blackened, fried, baked, grilled, or simmered into chowders. The firm flesh holds together well during cooking. For the best flavor, fillet the fish promptly after the catch and keep it cold. Choose fish that smells clean and fresh, and store freshwater drum well chilled, using it within a day or two or freezing it.
