About Fish, cusk, raw

The cusk (Brosme brosme), also spelled tusk, is a cod-like saltwater fish of the cold, deep waters of the North Atlantic, with a long, slender body and a single continuous fin along its back. It has firm, dense, white flesh that holds together exceptionally well, with a mild, sweet flavor much like its cod and haddock relatives, sometimes called a poor man's lobster when poached. Cusk is lean and high in quality protein, supplying vitamin B12, selenium, and phosphorus for relatively few calories.

Its sturdy, meaty texture stands up beautifully to chowders and stews, where it stays in firm chunks, and it is also excellent baked, broiled, poached, or fried. The flesh has long been popular salted and dried.
