About Fish, burbot, cooked, dry heat
The burbot (Lota lota), sometimes called the freshwater cod, eelpout, or lawyer, is the only member of the cod family that lives entirely in fresh water, found in cold lakes and rivers across the northern reaches of North America, Europe, and Asia. It has firm, white, flaky flesh with a mild, sweet flavor much like its saltwater cod relatives, which has earned it the nickname poor man's lobster when poached and dipped in butter.
Burbot is lean and high in quality protein, supplying vitamin B12, selenium, and phosphorus, and its liver is especially rich in vitamins A and D. The versatile flesh is delicious poached, baked, pan-fried, or used in chowders. It is a favorite catch of winter ice anglers. Choose fish that smells clean and fresh, and store burbot well chilled in the refrigerator, using it within a day or two or freezing it for later.
