About Fish, bluefish, raw

The bluefish (Pomatomus saltatrix) is a fast, aggressive saltwater fish found in temperate coastal waters around the world and a prized catch of anglers along the Atlantic seaboard, where seasonal blues runs draw crowds of surfcasters. So voracious it is nicknamed the chopper, it travels in large schools and can grow to twenty pounds or more. Its soft, full-flavored flesh looks grayish-blue when raw and cooks to an off-white, with a rich, distinctly pronounced taste far bolder than mild white fish.

Bluefish is an oily fish, which makes it an excellent source of heart-healthy omega-3 fatty acids, along with lean protein, selenium, niacin, and other B vitamins for moderate calories. Because of its high oil content it is best enjoyed very fresh and is wonderful grilled, broiled, smoked, or baked, where a squeeze of lemon, an acidic marinade, and bold seasonings cut its richness. A classic preparation is smoky New England bluefish pate spread on crackers.

The fish does not keep well and can turn strong quickly, so bleed it on the boat, keep it on ice, and cook bluefish the same day it is caught or bought for the cleanest flavor.
