About Fish, anchovy, european, raw
Anchovies are small, silvery, oily fish caught in great shoals and eaten whole. Fresh and raw they are mild; most people, though, meet them salt-cured and filleted, where they turn intensely savory — the umami backbone of Caesar dressing, puttanesca sauce and many a pizza.
For such a small fish they are nutritionally mighty. At about 131 calories per 100 grams raw, they are an excellent source of protein and omega-3 fatty acids, and because they are eaten with their tiny bones they also deliver calcium, along with iron, selenium and vitamin B12. Being low on the food chain, they tend to be low in mercury.
Fresh anchovies are a treat where you can find them, but the cured ones are the kitchen staple — used in small amounts they melt away and deepen the flavor of sauces and dressings. Note that cured anchovies are very salty, so a few go a long way.
