About Tamale, beef

The tamale is one of the oldest dishes in the Americas: a parcel of seasoned corn masa wrapped around a filling — here spiced beef — then steamed inside a corn husk until tender. Labor-intensive to make, they are a centerpiece of celebrations across Mexico and Central America.
