About Tamale, beef
The tamale is one of the oldest dishes in the Americas: a parcel of seasoned corn masa wrapped around a filling — here spiced beef — then steamed inside a corn husk until tender. Labor-intensive to make, they are a centerpiece of celebrations across Mexico and Central America.
At their heart is masa, a corn dough, which makes the wrapper a source of whole-grain carbohydrate, while the beef filling adds complete protein, iron and zinc. The fat used to enrich the masa, traditionally lard, contributes much of the roughly 175 calories per 100 grams.
Steamed rather than fried, a tamale is reasonably moderate for such a comforting food, especially next to salsa and a fresh side. The richness of the masa and the choice of filling are what move the numbers.
