About Spices, chervil, dried
Chervil (Anthriscus cerefolium) is a delicate spring herb with lacy, fern-like leaves and a gentle flavor of parsley brushed with a hint of anise. One of the four fines herbes of classic French cooking, alongside parsley, tarragon, and chives, it brings a subtle, refined freshness rather than a bold punch. Chervil is wonderful with eggs, in cream sauces, over fish and young vegetables, and stirred into soups and salads.
Because heat quickly destroys its fragile aroma, it is almost always added at the very end of cooking or used raw as a garnish. Chervil offers a little vitamin C and antioxidants for virtually no calories. Its mild taste means you can use it generously.
