About Kohlrabi, cooked, boiled, drained, without salt

Kohlrabi (Brassica oleracea Gongylodes Group), whose name means cabbage turnip in German, is an unusual-looking vegetable with a round, swollen stem that grows above the ground, topped by leafy greens, and comes in pale green and purple-skinned types. Both the bulb and the leaves are edible. Despite its alien, sputnik-like appearance, it is a cruciferous cousin of cabbage, broccoli, and kale, with a crisp, juicy texture and a sweet, mild flavor much like a broccoli stem crossed with a radish.

Kohlrabi is low in calories and high in vitamin C, fiber, and potassium. Raw, it is peeled and sliced thin or julienned for salads and slaws or eaten with dip like a crunchy snack, and it is just as good roasted, mashed, sauteed, or added to soups, curries, and stir-fries. Peel off the tough, fibrous outer skin first, then cook the greens like kale or collards. Smaller bulbs are the most tender, while large ones can turn woody.
