About Khorasan, grain, dry, raw

Khorasan wheat is an ancient grain, often sold under the trademarked name Kamut, with large, elongated amber kernels about twice the size of modern wheat berries. Believed to have originated in the Fertile Crescent and named for a historic region of Persia, it has a rich, buttery, slightly nutty flavor and a satisfying chew. Khorasan is a nutritious whole grain, offering more protein, healthy fats, and minerals like selenium, zinc, and magnesium than common wheat, though it does contain gluten and is not safe for people with celiac disease.

The kernels cook up plump and chewy, making them excellent in grain bowls, hearty salads, soups, and pilafs, while the flour bakes into flavorful breads, pancakes, and pasta and works well in sourdough. Soaking the berries for several hours or overnight before cooking shortens their time on the stove and helps them cook evenly. Some people who are sensitive to modern wheat report tolerating it more comfortably, though it is not gluten-free.

Its naturally sweet, mellow taste and firm bite make it one of the easiest ancient grains to fall for.
