About Fungi, Cloud ears, dried

Cloud ear fungus (Auricularia polytricha) is an edible jelly mushroom that grows in thin, ruffled brackets on dead and dying wood, its gray-brown, ear-shaped body giving the fungus its poetic name. A close cousin of wood ear, it is a mainstay of Chinese, Korean, and other East Asian kitchens, usually sold dried in crinkled black flakes that swell dramatically when soaked in water. It has almost no flavor of its own; what people prize is the texture — a delicate, crunchy-yet-gelatinous snap that holds up beautifully in stir-fries, hot-and-sour soup, mu shu pork, and cold salads.

Beyond the plate, it is very low in calories and a good source of dietary fiber and iron, and it has a long history in traditional Chinese medicine, where it is valued for supporting circulation. Dried cloud ear keeps almost indefinitely in the pantry, rehydrating in minutes into glossy, springy strips. One word of care: soak it only briefly and cook it promptly, since long soaking at room temperature can let bacteria grow.
