About Einkorn, grain, dry, raw

Einkorn (Triticum monococcum) is one of the most ancient cultivated wheats, grown by humans for over ten thousand years in the Fertile Crescent before higher-yielding modern wheats largely replaced it. Its name means single grain in German, a nod to the lone kernel in each spikelet. Einkorn has a rich, nutty, slightly sweet flavor and a golden color, and some people find it easier to digest than modern wheat, though it still contains gluten and is not safe for those with celiac disease.

Nutritionally it offers protein, fiber, and minerals such as iron and zinc, along with antioxidants and the carotenoids that give it its yellow hue. Sold as whole berries or milled into flour, einkorn is cooked like other whole grains for salads, pilafs, and grain bowls, or baked into rustic breads, pasta, crackers, and pancakes. Its weaker, more fragile gluten makes dough stickier and slacker than usual, so it takes a gentle hand, less kneading, and a little patience.

Store the berries or flour airtight in a cool, dry place, and refrigerate the flour to keep its oils fresh.
